Sunday Night Chocolate Cake
- 1 1/2 c. unsalted butter (room temp.)
- 1 1/3 c. sugar
- 3 large eggs (room temp.)
- 2 c. plus 2 Tbs cake flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. milk
- 1 tsp. Nielsen-Massey Vanilla
Directions:
Cream butter until light, add sugar slowly. Add eggs on at a time, beating after each until whole mixture is fluffly.
Sift dry ingredients together and add to batter in 3 parts, alternating with the milk added in 2 parts. Stir in vanilla and turn into pans.
For 3 9"layers bake at 350° approx. 25 min. For 10 8" layers bake at 400° for approx. 10 min. on the next to the highest rack. Use 1/4 c icing for each layer. I made 5 layers this time.
Chocolate Icing:
- 1 3/4 c plus 2 T sugar
- 1/2 c cocoa
- 1/4 tsp. salt
- 1/2 c milk
- 1/2 c unsalted butter
- 1 oz. unsweetened chocolate (broken into pieces)
- 1 tsp Nielsen-Massey Vanilla
- 2 tsp. heavy cream
Bring sugar, cocoa, salt, milk, and the butter to a full boil. Add the chocolate pieces and boil for 3 min. Turn off burner and let cool to 110°. DO NOT stir, shake, or jostle the pan until cooled (use thermometer). Beat in vanilla and cream, just until incorporated. DO NOT overbeat or you will have fudge!
